Sweet Potato Breakfast Skillet

Servings: 2 Time: 45 minutes


Ingredients:

2 bacon strips ½ medium onion, diced

⅕ pound breakfast sausage

2 medium sweet potatoes, dice small ¼ tsp pepper

2 eggs 2 stalks scallions, only the green Goat cheese or your favorite cheeses

Hot sauce! Yum, trust me needs hot sauce.

This is one of our signature breakfasts! We love to cook this plate on Saturday mornings when we have more time to enjoy a good warm breakfast. First cook the bacon in a cast iron pan and save the magical juice that comes out of the bacon. Add the onions into the hot bacon grease and cook them till soft, about 3 minutes. Add the sausage, crumble it up and let it cook. When the sausage is ready add the sweet potatoes, pepper and mix it. Right after that place the pan into the oven and bake it for about 25 minutes. While the potatoes are baking, fry as many eggs as you would like to eat. Normally we eat only one egg each. Sprinkle the green onion and the goat cheese and enjoy!
