Cottage Cheese Pancakes

Ingredients


6 eggs

6 tbs of butter

6 tbs of flour

1 cup of cottage cheese


This recipe never fails and is always a quick easy breakfast / brunch when you have a lot of people around or a good protein after the gym (Reduce the butter for the second option)


Blend the six eggs for a minute or until they triple in size. After the eggs are fluffy, melt the six tbs of butter and add it to the mix. Add the rest of the ingredients and blend it until thy are completely incorporated. As easy as that you have the batter ready for your pancakes!




On a medium heat pan or griddle pour the batter in a pancake shape. Cook them until they make little bubbles and flip them. This recipe will cook between ten to 12 pancakes.




Top the pancakes with your favorite fruits, I love them with strawberries and maple syrup… but Kevin loves to change our recipes all the time and we have found that we also like them with raspberries, mango, apple and sprinkles of turrón. We also love it with apricot sauce but every time I try to make it like my mother in law … never works! Hers is the best. We also like them with peaches, plums, apple, and pistachos or the classic peanut butter with banana! You can get very creative with these pancakes!
