Energy Bites

These are pretty much the perfect snack for those moments when you want something sweet. I love these little bites because they are healthy and very easy to make. The base for the bites are oats and peanut butter. You can modify the recipe adding more or less of the other ingredients. I am not a big fan of chocolate so you can add more chocolate chips if you prefer. I like my bites not too sweet so I used dark chocolate instead of semi sweet.
Ingredients
1 cup old fashioned oats
½ cup peanut butter
⅓ cup dark chocolate chips ⅓ cup dry cranberries ⅓ cup roasted almonds chopped
2 tbsp honey
Instructions
In a bowl combine all the ingredients until well mixed. Cover the bowl and chill in the fridge for 1-2 hours. Roll the dough into 1 inch balls. If you manage to not eat the dough while making the bites, you will be able to make 18 - 20 bites! Place them in the fridge in a sealed container up to a week… they won’t last that long, promise!
