Easy Pumpkin Soup

Ingredients 1 Tbsp olive oil

½ medium yellow onion

4 cloves garlic

2 Cups vegetable broth

1 can pumpkin puree

½ Cup water

½ Cup cream

1 Tbsp maple syrup

½ tsp salt

½ tsp pepper

½ tsp cinnamon

¼ tsp nutmeg

Substitutions: the water and cream could be swapped out for coconut milk or almond milk.


Instructions

Chop the onion and garlic very fine and sauté over medium heat. After the onions turn translucent, add everything else and mix until fully incorporated. Bring to a simmer and cook 5-10 minutes. Top with chopped toasted almonds and enjoy!


Idea: use leftovers as a sauce for cooking chicken?
