Carrot Cake

Ingredients
2 cups all purpose flour
2 tsp baking soda
2 tsp baking powder ½ tsp salt 2 tsp ground cinnamon
4 eggs 2 cups white sugar
1 cup vegetable oil 2 tsp vanilla
3 cups grated carrots (4 - 5 big carrots)
1 cup chopped pecans (optional)
1 cup raisins (optional)
For the frosting ¼ stick softened unsalted butter
4oz cream cheese (half package)
1 cup confectioners sugar
This recipe will give you about 18 servings in a pan of 9x13 inch cake. I bake it in two separate pans because I freeze half for later. This is not the most healthy cake we bake but certainly very tasty. We do not like nuts or raisins in our carrot cake but you can add what you like.
Preheat the oven 350 F. Mix the dry ingredients flour, baking soda, baking powder, salt and cinnamon. Beat together eggs, oil, white sugar and vanilla. Add the dry ingredients to the wet mixture until all combine. Next add the carrots and gently mix them in. Bake it for 40 - 50 minutes until a toothpick comes out clean. I like to leave it a little bit longer because I like the crunchy edges. Oh! If you dip that into your coffee you will experience heaven.
Frosting In a bowl mix butter, cream cheese and sugar. Mix with the mixer until it comes together. Done!
